Coffee-Banana Bread



This makes one 9 x 5 loaf of crazy good banana bread. I never make this as often as I want. That's probably for the best. lol

Ingredients
1 c well mashed, very ripe bananas
1/2 c strong black coffee
3/4 c melted butter
14 T brown sugar
2 eggs, at room temperature
1 1/4 t vanilla
1/4 t almond extract
zest of 1/2 an orange
1 c whole wheat flour
1 c all purpose flour
1/2 t salt
1 t cinnamon
1/4 t baking soda
1 1/2 t baking powder
1/4 t nutmeg
sesame seeds (although I have used corn meal successfully)

Directions
Heat oven to 350ยบ F.
Grease a loaf 9 x 5 loaf pan. Sprinkle sides and bottom with sesame seeds.
Combine bananas and coffee. Set aside.
Beat together butter, brown sugar, egg, vanilla, almond extract, and orange zest.
Add banana mixture.
Combine dry ingredients in large bowl.
Add, in parts, dry mixture into wet mixture.
Pour mixture into pan.
Bake for 40-50 minutes
Remove from oven. Cool for ten minutes before running a knife or metal spatula along the sides of the loaf and removing from the pan to a cooling rack. Cool completely before slicing.

4 eggs, room temperature
2 1/2 t vanila
1/2 t almond extract
zest of 1 orange
2 cups whole wheat flour
2 cups all purpose flour
1 t salt
2 t cinnamon
1/2 t baking soda
1 T baking powder
1/2 t nutmeg
sesame seeds (or corn meal)
