Chicken & Rice Medley




Ingredients
4 or more chicken breasts
2 3/4 Tablespoons of butter or margarine
1/3 cup chopped onion
1/2 cup chopped bell pepper
1/4 cup fresh parsley or 2 tablespoons of parsley flakes
3/4 cup of uncooked rice
15 oz can of chicken broth
1 1/4 teaspoons salt
1/4 teaspoon black pepper
3/4 teaspoon dried rosemary

Directions
Using part of the salt and pepper season the chicken breasts.
Brown the chicken in the butter or margarine.
Remove the chicken and keep warm.
In the same pan used to brown the chicken cook the onions, bell pepper, parsley, until tender.
Add the remaining ingredients: rice, chicken broth, remainder of salt and pepper, and rosemary.
Stir well and bring to a boil.
Pour the mixture into a baking or casserole dish.
Place the chicken on top.
Cover and bake for 1 hour at 350 degrees.

NB: You can substitute other pieces of chicken if you prefer thighs or legs.
