Golden Nugget Soup

Recipe card for golden nugget budget soup

 

This is also called Golden Nugget Budget Soup. It's basically corn and carrot chowder. It's one of my favorites because how good it tastes and how easy it is to make.

Original recipe

Ingredients

3 medium baking potatoes, diced
2 large carrots, diced
1 medium onion, diced
1 cup whole kernel corn
2 T margarine (or butter)
Salt and pepper to taste
1 can Cream of Chicken soup
2 c milk

Directions

Combine potatoes, carrots, onion, and corn in large Dutch oven or soup pot. Add enough water to cover the vegetables. Bring to a full boil, reduce to a strong simmer and cook until the vegetables are tender. Season with salt and pepper. Add margarine or butter, soup, and milk. Heat through. Taste for seasoning and adjust as needed.

My version

Ingredients

20 oz bag frozen diced potatoes
16 oz bag frozen crinkle cut carrots, "coins" quartered
1 medium onion
16 oz bag frozen sweet corn
2 T butter
1 T Chicken Better than Bullion
10.5 oz can Cream of Chicken soup
2 c milk

Directions

Combine potatoes, carrots, onion, and corn in large Dutch oven or soup pot. Add enough water to just cover the vegetables. Bring to a full boil, reduce to a strong simmer and cook until the vegetables are tender. Add Better than Bullion, butter, canned soup, and milk. Heat through. Taste for seasoning and adjust as needed. Add water or milk to adjust consistency.
