Lemon Butter Cookies
Ingredients
2 1/4 cups all-purpose flour1 cup granulated sugar
1 cup sweet unsalted butter, softened
1 large egg
1 teaspoon baking soda
1 teaspoon pure vanilla extract
2 teaspoons lemon extract
extra sugar, for dipping glass
Directions
Heat oven to 350F (180C).
Mix first seven ingredients together well using a heavy duty mixer.
Roll into 1/2 inch size balls. Place on ungreased cookie sheet with 2" between each cookie.
Flatten each ball with a sugar-dipped flat-bottomed glass.
Bake for 8-11 minutes or until lighly browned on the edges. Do not overbake.
Remove to wire racks to cool.

These ROCK my socks. OMG, they are sooooo good. I didn't think there would be enough lemon flavor for the amount of dough; but it's just right. I baked each batch for exactly 8 minutes. YUM YUM YUM
